Cracking open a fortune cookie is always fun. More fun is just around the bend when you and your child work together to make these literary fortune cookies filled with the wit and wisdom of Dr. Seuss.
What you’ll need:
- 1 egg white
- 1/8 teaspoon orange or lemon extract
- 1 pinch salt
- 1/4 cup unbleached all-purpose flour
- 3 tablespoons sugar
- 1-2 tablespoons water
Directions:
Before you start mixing and baking, get your fortunes ready to go. This recipe makes 12 fortune cookies, so you’ll need at least that many fortunes printed on small (2 ½ x ¾ inch) strips of paper. Type and print your favorite quotes from Dr. Seuss’s books or his Seuss-isms, then cut them to fit your cookies.
Preheat oven to 400 degrees. Heavily grease two cookie sheets using non-stick cooking spray.
Beat the egg white with an electric mixer until foamy. Add your choice of extract and blend. Sift the flour, salt, and sugar together and blend into the egg white mixture. Add water as needed until you have a batter the consistency of crepe batter.
Spoon batter into three-inch circles on the prepared cookie sheet. The circles should be at least 4 inches apart, so your sheet will only have 2-3 cookies. The batter should be spread as thinly and evenly as possible into round circles.
Bake for 5 minutes. Your cookies are done when the outer edges are golden brown and the center is set, but still pale.
Working quickly, remove a cookie with a wide spatula and place upside down on a clean tea towel. Lay a paper fortune just above the middle of the cookie then fold the cookie in half. To form the next fold, bend the straight edge across the rim of a cup or bowl and pull the pointed ends down. To help folded cookies keep their shape, cool them in a muffin tin. Keep fresh in an airtight container. If cookies don’t seem crisp when you’re ready to serve them, put them in a warm oven for about 10 minutes.
Enjoy your cookies at a family gathering or party. Have everyone read his or her fortunes aloud. Those who didn’t bake can take turns guessing which Seuss titles are being quoted!
